Nutritient ratings aim to make grocery shopping easier

Navigating through a grocery store, trying to sort between the healthy food and the not-so-healthy stuff seems to get tougher all the time. But a new nutrition scoring system that's just arrived in Canada promises to make it a little easier.

Pre-heat the oven to 200 degrees C/400F. Place all the bones and trimmings in a roasting tray and roast for about 30 minutes until well coloured.

Roast the chopped carrots and celery in another roasting tray for about 20 minutes until lightly coloured. 

Bring the stock to the simmer and occasionally skim off any impurities. Allow to cook for 6-8 hours - with this you will achieve the maximum taste. When ready, drain through cheescloth and discard the bones and vegetables. After the stock has cooled lift off any fat and store in the fridge or freeze.
